The 63 mm rubber build carries the same 10 bar working pressure as the smaller sizes, with a food quality synthetic rubber tube that is FDA approved and a steel wire helix inside high strength synthetic cord. Does the pressure rating drop as the bore grows?

Not in this range. The supplier lists 10 bar from 25 mm through to 76 mm, so a 63 mm hose is rated the same as a 25 mm one. That is unusual, and it is worth knowing when you are comparing it against a PVC food hose, where the rating falls with bore.
